OUR STORY

 

Our journey began with James Stuart, whose three decades in restaurants and boutique hotels revealed an opportunity. One night over Negronis, his friend, renowned interior designer Paul Bishop, mentioned how many owners and operators are unprepared for their operations. That conversation sparked the idea for Custard.

What started as a consultancy quickly evolved into a full-service group driven by a love for creating and operating impactful hospitality.

 

​WHY CUSTARD?

An inside joke soon became a metaphor for the "special sauce" that embodies our expertise. In today's landscape, the stakes are higher than ever—guests are more informed, and the margins are finer. They demand not only exceptional products and services but also meaningful connections.
